February Travel + The Best Gift Ever (HINT: It’s a Pressure Cooker)

I started writing this post by talking about how February has been the first month in a long time where I haven’t traveled – but then I realized that’s definitely not true. I guess that’s what happens when having a whole month between trips seems like an eternity! Josh and I spent a week in Arizona with my family for the Waste Management Phoenix Open (Not familiar? See here, here, and here.) followed by three days in San Francisco for one of my best friend’s engagement party at The Commissary in the Presidio (AMAZING FOOD AND COCKTAILS) followed by an afterparty at the SF Athletic Club (BATHTUB OF BEER).

And while we had an amazing time on vacation, there’s one thing I received recently that, dare I say it, rivals the trip in terms of my enjoyment… and that thing… is… A PRESSURE COOKER! Yes, a pressure cooker, or more accurately a “Fagor Lux Multicooker” that my dad loves so much that he and my mom bought me one for Valentine’s Day (thanks $99 + free shipping Sur La Table sale!). I’ve used it almost every day since, and sometimes twice a day…

Easy Recipes for Sunday Brunch

This year for Lent, Josh and I decided to give up eating at restaurants, and while I won’t get too much into the “whys,” it has been both more and less difficult than I anticipated. The tough part is that I absolutely love the experience of going out to eat, and I’ve realized how often we typically would have hit up our favorite spots – or tried new spots – already in the past week and a half. However, the nice part about it that I’ve been forced to start cooking more (something I love but have been too lazy to do lately with my crazy work schedule). This means that I’m eating more healthfully, since I know exactly what’s going into my food, and am saving a ridiculous amount of money.

Ridiculously Simple and Delicious German Pasta Salad Recipe

For my wedding I received an amazing book of recipes collected from my friends and family (thanks for putting that together, Krista!) and have been super excited to sort through all of the deliciousness. This past weekend for Father’s Day my dad and uncle smoked ribs and I just knew that I needed to bring Krista’s “Nudelsalat” (German Pasta Salad – she’s German). Not only was it so easy to make, but it was also so easy to make gluten and dairy-free for my allergic family members! Despite rushing around and only taking two crappy ingredient pictures, I promise that this is a delicious recipe.

Easiest Salmon Ever

I don’t know about you, but I often don’t want to cook simply because I don’t want to clean – that and I get so hungry that the thought of waiting another hour makes me sad. That’s when I rely on this super simple, super delicious (and healthy) salmon recipe!

Ingredients:

  • Salmon (single or multi-serve depending on the capacity of your cook surface, I usually cook a pound at a time)
  • Olive Oil
  • Salt & Pepper

Directions:

  1. Heat your grill or panini press/George Foreman Grill to high heat (for the quickest, easiest salmon I use our panini press)
  2. While the grill is heating, drizzle some olive oil over the salmon and sprinkle with salt and pepper to taste
  3. Wrap the salmon in foil
  4. Place on the gril and close the lid or pull down the press
  5. Cook for 10-15min, checking midway through cooking for doneness
  6. Enjoy!

Add some steamed green beans (or canned and microwaved if you’re really in a hurry) and you are good to go! The grill and foil mean no cleanup while the quick cook time allows you to eat healthfully even in a pinch.

Detox Recipes from Gwyneth Paltrow’s Kitchen

When coming off of a cleanse (which I kind of will be on Monday, though this one is not super strict or only juice) it is really important to treat your system right. That means not stuffing your self with all the sugar, white flour, fried foods, and alcohol your body hasn’t been processing for the past couple of days. Trust me, once you’ve re-calibrated your system to burn clean fuel, it doesn’t always appreciate being fed the cheap stuff! While I’ve never had a terrible reaction, I definitely get stomach aches much more easily after I’ve been eating healthy.

Here are some of the the clean recipes I’m looking forward to trying next week once I’m done Pepper Potts-ing myself!

GOOP Cleanses & Pepper Potts

Since I’m currently on this month-long journey to live like Gwyneth, I figured I should probably do some sort of cleanse. To be honest, I actually kind of enjoy “dieting” – is that weird? There is a part of me that likes the challenge of eating super healthy and reaching a goal. I think it probably stems from my athletic background and needing to hit certain standards/set new PRs. But I can’t do it for long.

When deciding which of Gwyneth Paltrow’s cleanses to try I remembered a post I saw several years ago on GOOP (which actually turns out to be almost FIVE years, I can’t believe it) called “The Making of Pepper Potts” in which GP described her routine for getting in shape for Iron Man 2. When I went on her site to search for the full article, however, I noticed it was no longer there. But, with a little sleuthing, I ended up finding an archived version of the post!

Sweet Potato & Five Spice Muffins

One of the recipes of Gwyneth Paltrow’s I’ve always wanted to make are her Sweet Potato & Five Spice Muffins. I finally found myself with all the ingredients and decided it was time to give them a go!

I woke up starving and still needed to cook the sweet potatoes, so I had a three berry and spinach smoothie for breakfast instead and saved these guys for a mid-day snack. Easy Baked Wings Recipe

I far too often order take-out wings and pretend like they’re healthy, especially during football season. It’s protein! Right? But today with my get fit goals in mind I decided to take matters into my own hands and make a healthier version! This baked wing recipe is so easy, I really have no excuse not to make this just as delicious and much healthier version from now on (unless, let’s be honest, I just need me some parmesan wings from Wingstop – if you haven’t had them disregard this blog post and give yourself a treat). The trick to this recipe is the wire rack – it simultaneously drains out some of the fat while helping give the wings that fried crispness.
